This recipe is not a ho-hum hummus -- it's full of flavor with an added kick! Hummus makes a great spread and dip -- use on sandwiches, pita chips, or as a healthy dip for fresh veggies. With carrots and sliced red bell pepper, this recipe tastes amazing!
1 large clove of fresh garlic
1/2 t. salt
1 bunch of fresh cilantro (remove thick stems, wash and spin dry)
1 can of chick peas (garbanzo beans) drained reserving liquid
2-1/2 Tablespoons of Chipotle Infused Texas Olive Oil
1-1/2 T tahini (optional)
In a food processor, chop garlic and salt until it forms a paste; add cilantro and process until smooth; add chick peas and tahini and process while drizzling Chipotle Infused Texas Olive Oil -- process until very smooth -- if too thick, drizzle in some of the reserved canned liquid (I added 4T.) until it is the consistency of a luscious dip! Super quick and easy!
